Days 4, 5, and 6

So my social life and being lazy has interfered with a couple of entries.

Friday was not a very strict day.  This way of eating seriously needs some foresight and planning, something I have yet to really work on.  Saturday was a vegan day, if you don't count the eggs (I'm almost out!).  Dinner last night was vegan nachos.  It was super good and really fast.  I think I'm going to add that to my lunch options and my lazy dinner choices.




I went shopping yesterday, and hit Sunflower market's super sales.  I also got a package of vital wheat gluten; I have some from baking, but if I'm using 1-1 1/2 C at a time, it won't last too long and I have running out of something critical mid recipe.

I'm planning a "pot roast" in the crock pot tomorrow.  I'll have enough for left overs and homemade seitan made up for recipes.  I also got some tofu; silken for homemade "sour cream" or something similar (I haven't decided yet), and extra firm for a main.  I'm hoping being more prepared will make this week a success.  The days I've cheated and had dairy I have paid for, and frankly I'm quite tired of it.

I will check in tomorrow with how my "pot roast" turns out.  I'm quite excited!

Day 3

Today was a bust.  Not going to lie.  I cheated for lunch and had pizza.  Pizza is my one weakness.  And for $5 for an amazing food truck lunch, it was worth it.  I think.  Breakfast was my standard, eggs and toast (I'm boring, but damn I love it!) and dinner was leftover "meat" loaf.  It was just as good reheated.

I haven't figured out what I'm doing for lunch tomorrow.  Despite cheating, what I really wanted (besides pizza) was salad.  I'm craving it like I've never craved salad before.  I happen to have some salad fixings in the fridge, so I'll probably toss something together sans dressing before I leave in the morning.

I know my posts are short, hopefully they'll get longer as this progresses.  I'm happy I've managed to write this the last four days straight AND write my husband a letter the last three nights running.  Now if I could get used to my new work schedule and keep up on my vegan attempt and with the new pet schedule....Ah well, tomorrow is another day, and I refuse to beat myself up over this.

Day 2

Well, today was kind of sad.  I ate eggs again, and had a veggie burger for lunch.  I meant to have leftovers, but I'll have them for dinner tomorrow.  I am working late, and sure will not want to cook dinner.

I made a batch of homemade vegan cheese sauce from one of the newly picked up library books.  It's cooking Vegan on the cheap, which is super nice.  I don't see a grocery run in the near future and I'm all for spending as little as possible!!

The cheese sauce went on a totally uninspired pasta and steamed veggie dish.  Asparagus, bell pepper, broccoli, and baby bella mushrooms.  Yum.  And I have a ton left!!

This is definitely needing a lot more time planning and prepping than my usual fair.  Between the extra prep and planning time, switching work schedules, and coordinating the furry hoard with only one person it has been a rough couple of days.  I'm hoping it will get better after a few days to get into the rhythm. 

We'll see!

Day 1

Breakfast was decidedly not vegan, what with the eggs and all. But I did not use butter on the skillet, so there's that.

Lunch was a colorful mess of veggies with glass noodles and curry. I have to say I love Glad steamer bags, those things rock!

Dinner tonight is "meat" loaf from TVP. It should be interesting with the homemade ketchup!  I also have some asparagus just screaming my name in the fridge to go with it. The loaf makes four servings which is great, leftovers for lunch tomorrow if it turns out!

Ten Week Vegan

Greetings!

Just like the title says, I will be going Vegan for 10 weeks.  I will be easing into it the first week, mostly because I have eggs I need to use.  Ten weeks may sound like a random amount of time, but it isn't.  My husband has shipped out for Basic Training, and while he's gone I will be trying something totally new.

The decision was made when I gave up dairy a couple of weeks ago.  I already had issues with dairy to begin with, and it seemed to get a lot worse lately.  Cutting it out made a huge difference with how I felt; it was scary, I had no idea how lousy I was feeling until I stopped eating it.

Right now the plan is go back to meat when Matt gets back.  When we do, I would like it to be Organic. 

Join me as I try to cut a bit out and add in a lot of stuff I should be eating!
